A New On-Site Microbrewery At This Gorgeous Hotel That T and L Has Named As One Of The World's Best

Set on a 600-acre estate, overlooking the Caribbean Sea on one side and the Piton Mountains on the other, Jade Mountain continues to set the bar of sustainability high. Designed and owned by famed architect Nick Troubetzkoy and his wife Karolin, this St. Lucian resort was developed in harmony with nature. The bold design with individual bridges leading to sanctuaries with infinity pools and an open wall concept was recently awarded as one of the top hotels in the world on the annual 2022 Gold List in Travel & Leisure, along with sister property, Anse Chastanet.


From the beginning, Nick and Karolin worked with communities and companies to source local products and decor and even participated in the adapt a Farmer program to ensure freshness in the ingredients for their selection of on-site restaurants. As the demand for the property grew and additional restaurants were added, including a vegan and vegetarian restaurant, they developed Emerald Farms to help sustain the produce needed. This included growing cocoa trees to develop a chocolate lab to create their own chocolate brand and a bee hive for honey.


With the development of the farm, son Yasha, who is the Assistant General Manager at the property, is spearheading the new craft microbrewery, which uses volcanic spring water derived from an on-site natural spring to ensure a sustainable brewing process. This, along with enhanced ingredients like the bark of the Bois Bandé Tree, the roots of a cinnamon tree, and a secret mix of spices from the head brewer's grandmother's kitchen, produces a unique flavor. This microbrewery will be one of only a few "Estate beers" being created using only local ingredients in the Caribbean.
